At the center of the guest experience is Flaggerdoot, our signature cocktail bar where creativity, sustainability, and storytelling converge.

Our cocktail program is intentionally designed around rotating, theme-led menus exploring concepts such as alchemy, fermentation, and native botanicals. Ingredients are thoughtfully sourced from the estate and trusted local producers. The department is led by Food & Beverage Director Tanguy Charbonnet (Australian Bartender of the Year 2025), the program is built on deep product knowledge, ongoing training, and a commitment to sustainability in every detail.

We are seeking an experienced and motivated Assistant Bar Manager  to support the leadership of Flaggerdoot and help deliver an exceptional, world-class guest experience.

Key responsibilities:

• Lead and deliver exceptional, personalised guest experiences
• Support daily bar operations and service execution
• Assist with stock ordering, inventory management and cost control
• Manage guest requests and resolve service issues promptly
• Ensure compliance with service standards, RSA and venue policies
• Collaborate across departments to ensure seamless guest journeys
• Lead by example with professionalism, energy and humility

About You:

• You are a confident hospitality professional who thrives in high-end, fast-paced environments and takes pride in delivering memorable guest experiences.
• Previous experience in a bar supervisory or assistant manager role
• Strong knowledge of spirits, cocktails and contemporary bar techniques
• Proven ability to lead, motivate and develop a team
• A genuine passion for guest experience and attention to detail
• Flexible availability, including weekends and public holidays
